Ingredients

1 lb ground beef or 1 lb veal
1 1/2 cups rice , raw , well rinsed
1 teaspoon salt
1/4 teaspoon turmeric , ground
1/4 teaspoon pepper
2 tablespoons tarragon , dried
2 bunches Italian parsley , chopped fine in a processor
1 cup leek , fine chopped
1/2 cup dill , fresh
1/2 cup onion , chopped fine
3 tablespoons oil
2 medium onions , sliced
1/4 teaspoon turmeric , ground
1 cup tomatoes , chopped
1 teaspoon salt
5 cups water
1 cup green peas ( fresh or frozen )
Koofteh Tabrizi is one of the most famous Persian dishes, originating from the city of Tabriz in northwestern Iran. This dish is a perfect combination of meat and rice that is flavored with a unique blend of herbs and spices. Instructions

1.Rinse the rice in cold water and drain.
2.In a bowl, mix well the ground beef, rice, 1 teaspoon salt, 1/4 teaspoon turmeric, 1/4 teaspoon pepper, tarragon, parsley, leek, dill, and chopped onions.
3.Mold the mixture into the size of tennis balls.
4.Heat the oil in a pan and fry the sliced onions until they turn golden brown. Add turmeric and fry for another minute.
5.Add the chopped tomatoes, salt, and 1/2 cup of water to the pan. Cook for 10 minutes on medium heat.
6.Add the remaining 4 1/2 cups of water to the pan and bring to a boil.
7.Carefully add the rice balls and green peas to the pan. Cover and cook for 1 hour on medium heat until the rice and meat balls are well cooked.
