Ingredients

1 small Cornish hen
2 pieces ginseng roots ( dried or fresh , approx . 2-3 inches long )
7 garlic cloves
7 dried red dates
5 dried chestnuts , peeled
1 cup sweet rice , uncooked
10 cups water
1/4 cup scallion , chopped
salt and pepper , to taste
Samgyetang, also known as Korean chicken ginseng soup, is a popular Korean soup made with a whole chicken stuffed with ginseng, garlic, rice, and other ingredients. It is a classic Korean dish that is widely consumed during the hot summer months as it is believed to aid digestion and replenish energy. Instructions

1.Prepare the chicken by rinsing it in cold water and removing any feathers and excess fat.
2.Stuff the chicken with 1 piece of ginseng root, 3 garlic cloves, 3 dried red dates, and 2 dried chestnuts.
3.In a large pot, add 10 cups of water and bring it to a boil.
4.Add in the uncooked sweet rice, 4 garlic cloves, 4 dried red dates, and 3 dried chestnuts.
5.Once the rice is cooked, add in the stuffed chicken and the remaining ginseng root, garlic cloves, and red dates.
6.Simmer for 40-50 minutes or until the chicken is fully cooked.
7.Season with salt and pepper to taste and sprinkle chopped scallions on top before serving.
