Ingredients

3 cups tarragon vinegar
4 cups water

12 whole cloves

4 lbs bottom round steaks
1 tablespoon flour
1 tablespoon ground ginger
3 -4 tablespoons oil

Instructions

1.In a large bowl, combine tarragon vinegar, water, sugar, salt, bay leaves, cloves, allspice, carrots, onions, bell pepper, celery, and fresh parsley to make a marinade.
2.Add the bottom round steaks to the marinade and refrigerate for 3-4 days, turning the steaks over occasionally.
3.Once marinated, remove the steaks from the marinade and pat them dry.
4.In a small bowl, mix flour and ground ginger together.
5.Dredge the steaks in the seasoned flour mixture.
6.Heat the oil in a Dutch oven and sear the steaks until browned on both sides.
7.Reduce heat to low and cover the Dutch oven. Allow the meat to cook for about 3 hours or until it is tender.
8.Serve the sauerbraten with boiled potatoes, red cabbage, and a thickened gravy.
