Ingredients

4 green ( under ripe ) mangoes - peeled , seeded , and cut into strips
1 piece fresh ginger root , chopped
3 cloves garlic , peeled
2 1/2 cups white sugar
1 teaspoon salt
1/2 teaspoon red pepper flakes
1 teaspoon cumin seed
2 cardamom pods
4 cardamom seeds
1 cinnamon stick
5 whole cloves
1 cup distilled white vinegar
5 black peppercorns , crushed
Mango chutney originated in India and is now highly popular across South Asia, Africa, and the Caribbean as a condiment and dip. Kokub's Mango Chutney is a Pakistani recipe that is flavored with sweet and tangy green mangoes along with spices of cumin, cardamom, cloves, cinnamon, and ginger which adds the unique flavor to the chutney. Instructions

1.In a food processor, pulse garlic and ginger until roughly chopped.
2.Add green mangoes to the food processor and pulse until the mangoes are finely chopped.
3.In a large pot, combine the chopped mangoes, sugar, salt, red pepper flakes, cumin seed, cardamom pods, cardamom seeds, cinnamon stick, cloves, vinegar, and black peppercorns.
4.Bring the mixture to a boil and then reduce the heat to low.
5.Simmer the mixture, stirring occasionally, for about an hour or until the chutney has thickened and the mangoes are soft.
6.Remove the cinnamon stick and cardamom pods from the chutney and let it cool before serving. Store the chutney in an airtight container in the refrigerator for up to a week.
