Ingredients

1 fresh pineapple
1 fresh chili pepper
1/3 cup honey or 1/3 cup maple syrup
1 lime , juice of
3/4 cup flaked coconut
vanilla ice cream

Instructions

1.Preheat the oven to 200 degrees C.
2.Peel and core the pineapple. Cut the pineapple into approximately 1 inch thick rings.
3.Slice the chili pepper into thin slices, removing the seeds if desired.
4.Mix together honey or maple syrup and lime juice in a small bowl.
5.Pour about half of the honey or maple syrup mixture onto a large plate. Place the coconut flakes on a separate plate.
6.Dip the pineapple rings into the honey or maple syrup mixture, coating both sides. Then dip in the coconut flakes, pressing the flakes onto the pineapple so they stick.
7.Place the pineapple rings onto a baking tray lined with baking paper. Place a slice of chili onto each pineapple ring.
8.Bake in the oven for 20-25 minutes, until the coconut is golden brown.
9.Serve with a scoop of vanilla ice cream and enjoy!
