Ingredients

1 cup brown rice
10 cups water
1/4 teaspoon salt
Kokkoh, also known as macrobiotic rice milk, is a traditional Japanese beverage that has been enjoyed for centuries. It is made from brown rice simmered in water and blended until smooth. The resulting liquid is strained and flavored with salt and sometimes sweeteners like maple syrup or vanilla extract. Instructions

1.Rinse the cup of brown rice under cold running water and drain well.
2.In a large saucepan, bring the 10 cups of water to a boil over high heat.
3.Add the washed brown rice and reduce the heat to low. Cover and allow to simmer for 2 hours.
4.After 2 hours, remove from the heat and allow it to cool.
5.Blend the cooked and cooled rice along with 2 cups of water in batches until smooth.
6.Pour the blended rice mixture through a fine mesh strainer into a large bowl.
7.Use a spoon to press the liquid out of the rice pulp.
8.Add the remaining 8 cups of water and salt to the strained rice milk. Stir well and refrigerate for a few hours before serving.
