Ingredients

750 g mincemeat ( lamb , beef , turkey .. the chefs preference )
1 medium onion , grated
1 red chili peppers , finely chopped or 1 teaspoon shwartz crushed chile
1 teaspoon ground cumin
1/4 teaspoon ground cloves or 2 ground fresh cloves
1 bunch coriander leaves , half chopped , half whole ( aka cilantro )
1 egg
250 g chorizo cooking sausage , chopped
olive oil
2 tablespoons harissa
800 g chopped tomatoes ( approx 2 tins )
400 ml chicken stock
1/2 teaspoon ground cinnamon or 1 cinnamon stick
Kofte & Chorizo Stew is an amazing dish that brings together North African and Spanish flavors. The dish is hearty, filling, and easy to make. Kofte is a traditional Turkish meatball made with ground meat, onions, and spices, while the chorizo adds a smoky and spicy kick to the dish. Instructions

1.In a large bowl mix the mincemeat with grated onion, half of the chopped coriander, egg, ground cumin, ground cloves, and a pinch of salt and pepper until evenly combined.
2.Roll the mixture into small balls (size is your choice), place them on a tray and refrigerate for 20 minutes.
3.Heat up some olive oil in a large saucepan and fry the chilled kofte until golden brown on all sides. Remove the kofte and set them aside.
4.In the same saucepan, add the chopped chorizo and fry until crisp and golden brown. Remove the chorizo and set aside. Keep the leftover oil in the pan.
5.Add harissa paste and chopped tomatoes to the saucepan and cook over medium heat for 5 minutes.
6.Add chicken stock and cinnamon to the pan, stir well, and let it simmer for 10 minutes.
7.Add the fried kofte and chorizo to the saucepan, cover it, and simmer for a further 10 minutes until everything is nicely cooked and the flavors are nicely combined.
8.Serve the stew hot with the remaining coriander leaves sprinkled on top.
