Ingredients

450 g minced beef or 450 g lamb
3 tablespoons finely chopped onions
1 tablespoon fresh coriander
1 tablespoon natural yoghurt
4 tablespoons plain flour
2 teaspoons ground cumin
1 teaspoon garam masala
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 green chili , seeded and finely chopped
2 garlic cloves , crushed
1/4 teaspoon black mustard seeds
1 egg ( optional )
salt & freshly ground black pepper
2 tablespoons ghee or 2 tablespoons butter
1 onion , finely chopped
2 garlic cloves , crushed
3 tablespoons curry powder
4 green cardamom pods ( or 1 teaspoon coriander seeds )
600 ml chicken stock
1 tablespoon tomato puree
2 tablespoons natural yoghurt
1 tablespoon fresh coriander
cooked rice , to serve

Instructions

1.In a bowl, mix the minced beef (or lamb), finely chopped onions, fresh coriander, natural yoghurt, plain flour, ground cumin, garam masala, ground turmeric, ground coriander, seeded and finely chopped green chili, crushed garlic cloves, black mustard seeds (optional egg) and salt & freshly ground black pepper.
2.Form the mixture into small balls and set aside.
3.In a pan, heat the ghee (or butter) and sauté the finely chopped onion and crushed garlic cloves until golden brown.
4.Add the curry powder and green cardamom pods (or coriander seeds) and stir for 1 minute more.
5.Pour in the chicken stock and tomato puree and mix well. Bring to a boil and cook for 5 minutes.
6.Carefully add the meatballs into the pan and reduce the heat to a simmer. Cook the koftas in the curry sauce for 20-25 minutes until the meat is cooked through.
7.Stir in the natural yoghurt and fresh coriander.
8.Serve the Kofta Curry with cooked rice and topped with coriander.
