Ingredients

6 cups water
24 g gingerroot
2 1/2 kg sugar
6 cups plain flour
6 teaspoons baking powder
125 g margarine
2 eggs
125 ml evaporated milk
312 ml lukewarm water
1 pinch salt

Instructions

1.In a large mixing bowl, sift in the flour and baking powder. Add the margarine and rub into the dry ingredients until the mixture resembles breadcrumbs.
2.In a separate bowl, whisk the eggs, evaporated milk, and lukewarm water.
3.Gradually add in the dry ingredients, stirring to form a soft dough. Knead the dough on a floured surface until smooth, then roll out into a thin sheet.
4.Cut the sheet into strips, then cut each strip diagonally to form diamond shapes.
5.In a deep frying pan, heat up the oil until hot. Fry the diamond shapes in batches until golden brown and cooked through, then remove and place on a paper towel.
6.In a large pot, add the sugar, water, and ginger. Bring to a boil, stirring until the sugar has dissolved. Reduce the heat and simmer for 20-25 minutes, until it thickens to a syrup consistency.
7.Dip the fried dough diamonds into the syrup, coating them evenly. Remove and place on a wire rack to cool and allow the syrup to set. Serve and enjoy!
