Ingredients

3 1/3 pounds baby goat meat , cut into small cubes
salt to taste
1 pinch ground turmeric ( holud powder ) , divided
3 potatoes , peeled and halved
5 tablespoons vegetable oil
1 teaspoon white sugar , divided
3 cardamom pods
4 whole cloves
1 piece cinnamon stick
3 onions , sliced
4 cloves garlic , minced , or more to taste
1 piece fresh ginger , cut into thin slices
2 small tomatoes , chopped
1 green chile pepper , chopped , or more to taste
3/4 teaspoon cayenne pepper
2 cups water , or as needed
1 teaspoon chopped fresh cilantro
Kochi panthar jhol is a popular curry dish from the Indian state of West Bengal, often served during special occasions. Instructions

1.Season the goat meat with salt and half the turmeric powder, set aside.
2.Heat the oil in a pan, add the potatoes and sprinkle with a pinch of salt and half the sugar.
3.Fry until lightly browned, remove from the pan and set aside.
4.Add the cardamom pods, cloves, and cinnamon stick to the pan and fry until fragrant.
5.Add the sliced onions and fry until translucent.
6.Add the garlic and ginger slices, fry until fragrant.
7.Add the tomatoes, green chile pepper, and remaining turmeric powder.
8.Fry until the tomatoes break down and soften.
9.Add the goat meat and fry until browned.
10.Add cayenne pepper and 2 cups of water.
11.Bring to a boil then reduce the heat to low and let it simmer until the goat is tender.
12.Add the fried potatoes and cook for an additional 5 minutes.
13.Garnish with chopped cilantro and serve hot with rice or bread.
