Ingredients

250 g semolina flour or 1 1/3 cups semolina flour
50 g all-purpose flour or 1/4 cup all-purpose flour
1/2 - 1 teaspoon salt
100 g olive oil , warmed slightly
warm water
3 cups pitted dates , deglet noor prefered nut not required
3 oranges , zest of
1 teaspoon ground cinnamon
2 tablespoons olive oil ( optional )
1 teaspoon orange blossom water
Kobz Abraj is a traditional Tunisian breakfast pastry that features sweet, sticky dates encased in a semolina-based dough. Instructions

1.In a large mixing bowl, combine the semolina flour, all-purpose flour, and salt.
2.Gradually pour in the warmed olive oil while kneading the dough until it is well combined.
3.Slowly add warm water to the mixture while kneading until it forms a smooth dough. Cover the dough with a damp cloth, and let it rest for 20 minutes.
4.While the dough is resting, prepare the date filling. In a food processor, pulse the dates until they are finely chopped. Add in the orange zest, cinnamon, olive oil, and orange blossom water, and pulse again until fully mixed.
5.Preheat the oven to 180C. Divide the dough into 16 equal portions and shape each into a ball. Flatten each ball with your hands to form a disc. Spoon a tablespoon of the date mixture into the center of the dough disc.
6.Carefully fold the edges of the disc to cover the date filling and form a ball. Using the palm of your hand, flatten each ball into a disc shape approximately 1 cm thick.
7.Arrange the discs on a greased baking tray, and bake in the preheated oven for 20 minutes or until golden brown. Serve warm or cold, as desired.
