Ingredients

2 cups cooked white rice ( cold )
1/2 cup white raisins
1/2 cup green onions ( minced ) or 1/2 cup white onion ( minced )
2 eggs ( beaten )
4 tablespoons schmaltz ( chicken fat )
1/4 cup flat-leaf Italian parsley ( finely chopped )
1 tablespoon peanut oil ( may substitute vegetable oil )
1 teaspoon salt
1 tablespoon Splenda sugar substitute ( to taste ) or 1 tablespoon granulated sugar ( to taste )
1 teaspoon white pepper ( may substitute black pepper )

Instructions

1.Preheat oven to 375°F.
2.In a mixing bowl, combine the cold cooked rice, white raisins, minced green onions, beaten eggs, schmaltz, finely chopped parsley, peanut oil, salt, sugar substitute or granulated sugar and white pepper. Mix well.
3.Lay an egg roll wrap on a clean surface.
4.Place 2 tablespoons of the rice mixture on the center of the wrap.
5.Lift one of the longer sides of the wrap and wrap it around the filling, then smooth it down.
6.Do the same with the other longer side of the wrap.
7.Turn the wrap so one of the shorter sides is facing you and slightly overlaps the filling.
8.Roll the knish away from you and tuck in the sides as you go until you reach the end. Do not roll too tightly.
9.Repeat with the remaining rolls and filling.
10.Place the knishes seam side down on a baking sheet.
11.Brush with egg wash (1 beaten egg mixed with 1 tablespoon water).
12.Bake for 25 to 30 minutes or until golden brown.
