Ingredients

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon sugar
3 eggs , beaten
1 1/2 cups milk , or as needed
4 cups dry white bread cubes
4 slices bacon , sliced into small strips
1 jar sauerkraut - rinsed and drained
salt and pepper to taste
1 teaspoon caraway seeds
2 teaspoons cold water
1 teaspoon cornstarch
Knedliky is a classic Czech dish that is historically a staple food of the Czechs, though it can also be found in Austrian, German, and Polish cultures. The dish is made from a soft, doughy mixture of flour, eggs, and milk that is formed into little round dumplings, similar in size and shape to large meatballs. When boiled, the Knedliky dumplings puff up and form an airy, yet moist consistency that's similar to a light and fluffy loaf of bread. The most popular way to serve Knedliky is with Sauerkraut (Zeli), a tangy cabbage dish that is commonly used as a topping for bratwurst sausages.

Instructions

1.Mix together flour, baking soda, baking powder, salt, and sugar in a large mixing bowl.
2.Add in beaten eggs and milk.
3.In a separate bowl mix together the bread cubes and bacon.
4.Add bread and bacon mixture to the flour mixture and mix everything until well combined and the dough is formed.
5.Let the dough cool for about 5 minutes.
6.Form the dumplings, using your hands to roll them into balls that are 2 to 3 inches in diameter.
7.In a large pot, fill with water and bring to a boil. Add the dumplings and steam for about 20 to 25 minutes, or until the dumplings are cooked through.
8.Heat the sauerkraut in a separate pan.
9.Add salt, pepper, and caraway seeds to taste.
10.In a separate bowl, mix together the cold water and cornstarch.
11.Once dumplings are cooked, serve with a side of sauerkraut; pour over the starch-water mixture and stir well.
