8 -10 black peppercorns
2 teaspoons salt ( or to taste )
cold water ( enough to cover the bones )

Instructions

1.Place the beef bones with marrow in a large 8-qt stockpot, crockpot or slow-cooker.
2.Add in tomato paste, onions, carrots, parsley flakes (if using), peppercorns, salt and enough cold water to cover the bones.
3.Bring to a boil over high heat.
4.Skim off any scum that comes to the top.
5.Reduce heat and simmer uncovered for 12-14 hours.
6.During the last 30 minutes of cooking time, add in the chopped fresh parsley and other herbs of your choice (if using).
7.Strain the stock through a fine cheesecloth and discard the solids.
