Ingredients

2 medium eggplants
olive oil ( as needed )
1 lb lean ground beef ( or can use ground lamb )
2 medium onions , peeled and chopped
2 tablespoons fresh minced garlic ( or to taste , I use lots ! )
1 can tomato sauce
1 teaspoon dried oregano ( or to taste )
1 teaspoon salt , divided ( or to taste , I use seasoned salt )
1/2 teaspoon fresh ground black pepper ( or to taste )
3 tablespoons butter
1/2 teaspoon salt ( I use seasoned salt )
1/2 teaspoon fresh ground black pepper ( or to taste )
2 tablespoons flour
1 cup half-and-half cream
1 egg
1/2 cup grated parmesan cheese ( can use more )
Kittencal's Greek Moussaka is a classic Greek dish, perfect for meat lovers who are looking for a Mediterranean twist. This dish features layers of ground beef (or lamb), sautéed eggplant slices, and a béchamel sauce made with parmesan cheese. It's a hardy meal packed with protein and nutrients your body needs. Instructions

1.Preheat oven to 375 degrees F.
2.Cut eggplant crosswise into 1/2-inch-thick slices, sprinkle with salt and let sit for 45-60 minutes. Rinse well with cold water and gently squeeze out any excess water.
3.Heat a small amount of olive oil in a skillet over medium heat.
4.Brown the ground beef or lamb with onions and garlic until no longer pink.
5.Add tomato sauce, oregano, 1/2 teaspoon salt, and pepper; bring to a boil, reduce heat, and simmer for 20-25 minutes.
6.In another saucepan, melt butter over low heat.
7.Stir in 1/2 teaspoon salt and 1/2 teaspoon black pepper.
8.Add in flour and stir constantly for 1 minute, gradually adding half-and-half cream and continue to stir for 2 minutes until thickened.
9.Beat in 1 egg and stir in the grated parmesan cheese.
10.In a greased 13 x 9-inch baking dish, arrange a layer of eggplant slices, top with a layer of the meat mixture, and continue alternating layers, ending with a layer of sliced eggplant.
11.Pour the cheese sauce over the top layer of eggplant.
12.Bake uncovered for 35-40 minutes.
