Ingredients

6 boneless skinless chicken breasts
2 1/2 cups low-fat marinara sauce ( or meatless pasta sauce , can use a little more )
1/3 cup flour
1 large egg ( might use two )
1 cup dry breadcrumbs
1/4 - 1/3 cup grated parmesan cheese
1 teaspoon garlic powder
2 teaspoons dried parsley
3/4 teaspoon dried Italian seasoning ( rubbed between fingers to release the flavors )
1/4 - 1/2 teaspoon seasoning salt or 1/4-1/2 teaspoon white salt
1/2 teaspoon black pepper
1/4 - 1/3 cup grated parmesan cheese
1 cup shredded lowfat mozzarella cheese ( optional )

Instructions

1.Preheat oven to 375°F.
2.Pound chicken breasts to an even thickness.
3.In a shallow dish, mix flour, garlic powder, parsley, Italian seasoning, salt and black pepper.
4.In another shallow dish, beat the egg with 1 tablespoon of water.
5.In a third shallow dish, mix breadcrumbs with Parmesan cheese.
6.Dredge chicken breast in the seasoned flour mixture.
7.Dip each breast in egg mixture, making sure to shake off excess.
8.Coat dipped chicken breast in breadcrumbs mixture, pressing gently so that crumbs adhere.
9.Place chicken breasts into a large baking dish. Spoon marinara sauce over chicken breasts.
10.Sprinkle with remaining Parmesan cheese.
11.Bake for 35 to 40 minutes or until the chicken is cooked through. If using, sprinkle mozzarella cheese over the chicken in the last 10 minutes of cooking. Bake until the cheese is melted and bubbly.
