Ingredients

2 tablespoons olive oil ( or as needed , I some times use bacon grease in place of olive oil )
2 tablespoons butter
salt
fresh ground black pepper ( more added at the end if needed )
2 lbs boneless beef roast ( cut into about 1-inch cubes or use beef short ribs )
3 medium onions ( about 7 cups )
1 tablespoon dried oregano ( or to taste )
3 tablespoons fresh minced garlic ( or to taste )
1/3 - 1/2 cup dry red wine ( can use more )
3/4 - 1 teaspoon cinnamon
1 tablespoon sugar
2 tablespoons red wine vinegar
4 whole cloves
1 can stewed tomatoes ( undrained )
1 can beef broth
2 bay leaves
1/4 - 1/3 cup currants ( or to taste )
1 cup crumbled feta cheese ( or to taste )

Instructions

1.In a large pot, heat the olive oil and butter over medium-high heat until melted.
2.Add the beef and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
3.Add the onions, oregano, and garlic to the pot, stirring to combine. Cook until the onions are tender and translucent, about 10-15 minutes.
4.Pour in the red wine, cinnamon, sugar, red wine vinegar, and cloves, stirring to combine. Let the mixture come to a simmer.
5.Add the stewed tomatoes, beef broth, bay leaves, and currants to the pot, stirring to combine. Let the mixture come to a boil, then reduce the heat to low and cover the pot. Simmer for 2-3 hours, stirring occasionally, until the beef is tender.
6.Remove the bay leaves and cloves from the stew. Sprinkle the feta cheese over the top of the stew and stir gently to incorporate. Serve hot with crusty bread or over rice.
