Ingredients

2 cups pinto beans or 1 lb dry pinto beans
2 lbs lean ground beef
1/2 teaspoon cayenne pepper ( or to taste )
1 package taco seasoning mix ( my Kittencal 's Taco Seasoning Mix works well for this )
1 large onion , finely chopped ( or use 2 medium onions )
1 small green bell pepper , seeded and chopped
2 tablespoons minced fresh garlic
1 -2 jalapeno pepper , seeded and finely chopped
seasoning salt ( or taste , or use white salt )
1 -2 teaspoon coarse black pepper ( or to taste )
1 1/2 - 2 cups salsa ( or to taste )
1/2 cup diced chile ( or to taste )
2 cups grated monterey jack cheese ( or to taste )
1 1/2 cups grated cheddar cheese ( or to taste )
6 -10 flour tortillas
Kittencal's Beef Burritos are a hearty and satisfying meal that can be made for dinner or a potluck. This recipe includes tender pinto beans that have been simmered until soft, seasoned ground beef, and plenty of vegetables and cheese. The dish is both filling and flavorful, making it a great choice for any occasion. To make the dish even healthier, consider swapping the ground beef for lean ground turkey or chicken, or using low-fat cheese.

Instructions

1.Rinse and sort through the pinto beans, placing them in a large Dutch oven or heavy-duty pot. Cover with water, bring to a boil, then simmer for 2 hours or until tender.
2.In a large skillet, brown the ground beef over medium heat. Once browned, add the cayenne pepper, onion, green bell pepper, garlic, jalapeno pepper, taco seasoning mix, seasoning salt, and black pepper. Cook until the vegetables are softened and the meat is cooked through.
3.Preheat the oven to 375°F. In a 9x13-inch baking dish, spread a bit of salsa on the bottom. Next, add the burrito filling by layering the beans first, then the beef mixture. Add a layer of diced chile next. Top with a layer of cheese and more salsa.
4.Roll the flour tortillas and place them seam side down in the dish. Cover with the remaining cheese and salsa. Cover the dish with foil and bake for 20 minutes or until hot and bubbly. Serve immediately.
