These egg rolls are also baked, which makes them a lighter and healthier alternative to traditional fried egg rolls. Whether you serve them as an appetizer or a main dish, Kimmy's Egg Rolls are a crowd-pleaser that will leave you feeling satisfied and guilt-free.

Instructions

1.In a large skillet, cook the ground turkey or chicken over medium-high heat, breaking it up with a wooden spoon.
2.Stir in the broccoli slaw mix, ginger, mustard, and soy sauce. Cook for 3-5 minutes, until the slaw mix is tender and the meat is cooked through.
3.Remove the skillet from heat and let cool for a few minutes.
4.Preheat the oven to 400°F.
5.Lay an egg roll wrap on a flat surface, with one corner facing towards you. Spoon 2-3 tablespoons of the meat mixture onto the middle of the wrap.
6.Roll the bottom corner up over the filling, tucking it tightly underneath the mixture.
7.Fold the sides of the wrap over the filling, towards the center.
8.Brush the top corner of the wrap with water, and then roll up tightly towards the top corner – this is to seal up the wrap.
9.Repeat with the remaining egg roll wraps and filling.

PROS

These egg rolls are packed with flavor and can be customized to your liking by adjusting the amount of ginger and mustard.
They are also baked, so they are a healthier alternative to traditional fried egg rolls.

CONS

The broccoli slaw mix can make the filling slightly watery, which can affect the texture of the egg rolls.
It’s important to cook the mixture thoroughly to avoid sogginess.

HEALTH & BENEFITS

This recipe is a great way to incorporate vegetables into your diet. The broccoli slaw mix is high in vitamin C, fiber, and antioxidants. The ground turkey or chicken is a lean source of protein, and the soy sauce is a lower-sodium alternative to traditional soy sauce.
