Ingredients

1/2 lb Italian sausage ( I use Spicy Turkey sausage )
1/2 lb ground beef ( I use ground Turkey breast )
1 teaspoon minced garlic , about
1 tablespoon dried basil
1/2 teaspoon salt ( I usually use less than this )
1 can whole tomato ( Cut up and use the juice also )
2 cans tomato paste
1 cups ricotta cheese or carton ricotta cheese ( I use the low fat version )
1 cup cottage cheese ( lowfat or non-fat )
1/2 cup parmesan cheese
2 tablespoons parsley flakes
2 eggs , beaten
2 teaspoons salt
1/2 teaspoon ground black pepper
lasagna noodle , cooked ( Just enough for two layers in a large Glass Pyrex baking pan )
1 lb mozzarella cheese , grated

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, cook the Italian sausage and ground beef over medium heat until browned and crumbled, about 10 minutes.
3.Add in the minced garlic, dried basil, and salt, and cook for an additional 2-3 minutes until the seasonings are fragrant.
4.Add in the cans of tomato paste and whole tomato (cut up and use the juice as well), and stir until well combined.
5.In a separate bowl, combine the ricotta cheese, cottage cheese, parmesan cheese, parsley flakes, beaten eggs, salt, and black pepper.
6.In a large glass Pyrex baking dish, layer the lasagna noodles (cooked) and spread the cheese mixture over the top of the noodles to create a thick layer.
7.Pour the meat and sauce mixture over the cheese layer.
8.Sprinkle grated mozzarella cheese over the top layer of the lasagna.
9.Cover the baking dish with foil and bake for 25 minutes in preheated oven.
10.Remove the foil and continue baking for an additional 25 minutes, until the top layer of cheese is golden and bubbly.
11.Allow the lasagna to cool for 10-15 minutes before serving.
