1 can crushed tomatoes ( about 1 1/2 cups )
2 cups diced sweet potatoes
1 cup water
1 can kidney beans , drained ( about 1 1/2 cups )
2 small seedless oranges , peeled and cubed

Instructions

1.In a large pot, heat the oil over medium heat and sauté the bay leaves, ginger, and garlic until fragrant for about 1 minute.
2.Add in the cumin seeds, garam masala, fenugreek seeds, oregano, rosemary, turmeric, and salt and stir well. Sautee until fragrant for about 1 minute.
3.Add in the tamarind pulp, crushed tomatoes, sweet potatoes, and water, and bring the mixture to a simmer. Stir and cover, cooking for about 15 minutes.
4.Add in the kidney beans and cook for an additional 5 minutes or until everything is heated through.
5.Remove from heat and stir in the cubed oranges.
6.Serve hot over rice or with a side of bread.
