Ingredients

1 package frozen spinach leaves ( thawed ) or 1 bunch fresh spinach , rinsed and drained
3 cloves fresh garlic , minced
3 tablespoons fresh romano cheese
2 tablespoons good virgin olive oil
3 tablespoons butter ( no exceptions )
salt and pepper
1/4 teaspoon fresh nutmeg ( if you do n't have fresh omit )

Instructions

1.If using fresh spinach, blanch the spinach in boiling water for 1 minute, then rinse in cold water and drain. Squeeze the blanched or thawed spinach to remove excess water, then chop coarsely.
2.In a skillet over medium heat, melt the butter and add minced garlic. Cook the garlic for 1 minute, stirring frequently.
3.Add spinach to the skillet and stir. Cook for 2-3 minutes.
4.Add grated Romano cheese, salt, pepper, virgin olive oil, and nutmeg. Stir well.
5.Serve hot and garnish with extra grated cheese, if desired.
