Instructions

1.Preheat oven to 375°F (190°C) and grease muffin pans.
2.In a medium mixing bowl, combine cornmeal, flour, sugar, baking powder, salt, and cayenne pepper (if using).
3.In another bowl, whisk together the yogurt (or buttermilk), melted butter, and lightly beaten egg.
4.Add the wet ingredients to the dry mixture and stir until just combined.
5.Fold in the chopped jalapeno peppers.
6.Spoon the batter into the muffin cups, filling each three-quarters full.
7.Bake for 20 to 25 minutes or until muffins are golden brown and a toothpick inserted in the center comes out clean.
