Ingredients

2 eggs
3 egg yolks
2 tablespoons sugar
1 tablespoon rich cream
2 tablespoons rum or 2 tablespoons brandy ( I 've used 1 tsp of rum flavouring in the past )
1 cup sifted flour , plus
2 tablespoons sifted flour
1/2 teaspoon salt
oil ( for deep frying )
Khrustyky are a type of Ukrainian pastry that are traditionally served during the Christmas holidays and at special occasions such as weddings and birthdays. These little diamond-shaped pastries are lightly sweetened and flavored with rum or brandy, and deep-fried until golden brown. They are a popular treat in Ukraine and are often enjoyed with a cup of tea or coffee. Khrustyky can be eaten plain or dusted with icing sugar for an extra touch of sweetness.

Instructions

1.In a bowl, whisk eggs, egg yolks, sugar, cream, and rum or brandy if using.
2.Add sifted flour and salt, and whisk until a dough forms.
3.On a floured surface, knead the dough for 10-15 minutes until smooth.
4.Divide the dough into small portions and roll out each individual portion as thinly as possible.
5.Cut the rolled-out dough into narrow strips, then slice those strips diagonally into small diamond shapes.
6.Heat the oil in a frying pan until hot, then add the diamond-shaped dough and deep-fry until golden brown.
7.Remove from the oil and drain on paper towels.
8.Sprinkle with icing sugar and serve.

Crispy and sweet on the outside, soft and chewy on the inside, Khrustyky are a delicious treat for everyone.

CONS

As Khrustyky are deep-fried, they are high in calories and fat.
