Ingredients

6 lamb shanks
cold water
1 dried lime ( noomi , loomi , 1 strip of lemon rind may be used )
1 large onion , finely chopped
1/4 cup olive oil
1 teaspoon baharat ( Baharat Aka Middle East Mixed Spices - the Real Mix )
1/2 teaspoon turmeric
2 cups canned tomato puree ( I always sweeten with 3/4 Tbls brown sugar )
salt & pepper
1/4 cup raisins ( optional , I recommend )
1 lemon , juice of ( optional I think it just adds more to the flavor , which is good . )
Khouzi Ala Timman is a traditional Iraqi dish that is typically served during special occasions or family gatherings. Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large pot, place the lamb shanks and cover with cold water.
3.Add the dried lime and cook over medium-high heat until the water comes to a boil.
4.Reduce the heat to low and simmer for about 20 minutes, skimming off any foam or impurities that rise to the surface.
5.Drain the lamb shanks and rinse them with cold water, discarding the water and dried lime.
6.In the same pot, sauté the onion in olive oil until translucent.
7.Add the baharat and turmeric and cook for a minute or two until fragrant.
8.Add the canned tomato puree and season with salt and pepper.
9.Return the lamb shanks to the pot, spoon the tomato sauce over them, and add the raisins and lemon juice (if using).
10.Cover the pot with a lid and bake in the oven for 2 to 3 hours, or until the meat is falling off the bone.
11.Meanwhile, prepare the rice according to package instructions.
12.Serve the lamb shanks with the rice and enjoy!
