Ingredients

1 lb lamb , cut into chunks
1 head celery , cut into 2 inch pieces
1 onion , diced
4 garlic cloves , minced
1 bunch green onion , chopped
2 bunches mint , chopped
1 bunch parsley , chopped
3 dried persian lemons ( can be found at most Middle Eastern markets )
3 cups water
2 cups water
2 2 teaspoons you can use vegetables or 2 teaspoons chicken bouillon
1/2 teaspoon turmeric
5 tablespoons olive oil
salt and pepper

Instructions

1.In a pot, heat 2 tablespoons of olive oil over medium heat. Add the lamb and brown for 5-7 minutes, then remove and set aside.
2.Add the remaining olive oil to the pot and sauté the onion and garlic until they are translucent.
3.Add the turmeric and stir for until fragrant.
4.Add the celery, green onion, parsley, mint, and persian lemons, followed by the browned lamb and salt and pepper to taste.
5.Add 3 cups of water, cover, and cook on medium low heat for 1 hour.
6.After 1 hour, add the bouillon and 2 cups of water, and continue to cook for another 30-60 minutes until the lamb is tender and the stew is thickened to your preference. Adjust salt and pepper as needed.
7.Serve hot with rice or bread.
