Ingredients

1 lb lamb ( or you can use beef )
2 medium onions , diced
4 garlic cloves , minced
3 persian lemons
5 cups water
2 cans stewed tomatoes , diced
1/2 cup split peas
1 tablespoon tomato paste
4 tablespoons olive oil
1/2 teaspoon turmeric
2 teaspoons spices , advieh ( this can be found at a Middle Eastern Market . Or you can use vegetable or chicken bouillon . )
salt and pepper
1 cup French fries ( I use frozen )
Khoresht Ghaimeh is a traditional Persian stew that is typically made with lamb or beef, split peas, and Persian limes. It is a popular comfort food in Iran and is often served with rice or bread. The meat and split peas are cooked together in a tomato-based sauce that is seasoned with a blend of spices called advieh. This fragrant mixture usually includes cinnamon, cumin, cardamom, and rose petals, among other ingredients. The stew is finished with crispy French fries that are added to the pot just before serving. The combination of textures and flavors makes this dish truly unique and satisfying.

Instructions

1.In a large pot, heat 2 tbsp of olive oil and saute the onion and garlic until golden brown.
2.Add the meat to the pot and stir until browned.
3.Add 5 cups of water and bring to a boil. Reduce heat and let it simmer for an hour.
4.In a separate pot, boil the split peas until tender.
5.Add the split peas, stewed tomatoes, tomato paste, turmeric, advieh (or bouillon), salt, and pepper to the meat pot.
6.Cut the Persian lemons in half, scoop out the flesh, and discard the seeds. Mash the flesh with a fork and add it to the pot.
7.Simmer until the meat is tender and the stew has thickened, around 30-45 minutes.
8.In a frying pan, heat the remaining 2 tbsp of olive oil and fry the French fries until crispy.
9.Add the French fries to the stew and serve hot.
