1 can red kidney beans

3 small bunch coriander
2 bunches spring onions
1 handful dill
2 bunches chives or 2 bunches of shallot greens
360 g diced lamb
1 onion
1 large preserved lemon
salt and pepper
2 lemons , juice of
1 tablespoon olive oil

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a large pot over medium heat, add olive oil and diced onions. Cook onions until golden brown, stirring occasionally.
3.Add diced lamb to the pot and brown all sides.
4.Add kidney beans, parsley, fenugreek leaves, coriander, spring onions, dill, chives/shallot greens, preserved lemon, salt and pepper to the pot.
5.Pour lemon juice into the pot and stir well. Cover the pot and place it in the oven.
6.Cook the stew for about 2 hours in the oven.
7.Serve hot with bread or rice.
