Ingredients

2 cups basmati rice
1 pound eggplant , sliced into 1-inch rounds
1 pound beef stew meat
4 cups water
1 teaspoon ground cinnamon
1/2 teaspoon ground turmeric
2 tablespoons olive oil
1 large onion , chopped
1 can diced tomatoes
1 can tomato sauce
1 teaspoon salt as needed
1/4 cup butter
1 tablespoon water
Khoresht Bademjoumn is a traditional Persian dish that is often served at family gatherings, celebrations, and festivals. Instructions

1.In a pot, add sliced eggplants in salted water and let it sit for 20 minutes.
2.In another pot, heat 1 tbsp olive oil, add the chopped onions, and fry until golden brown.
3.Add beef stew meat and cook until browned.
4.Then add cinnamon, turmeric, salt, canned diced tomatoes, and canned tomato sauce. Cook for 10 minutes.
5.Lastly, add eggplants and 1 tbsp water and cook for 30 minutes on low heat.
6.In a pot, add 4 cups of water, and bring to boil. Add 2 cups of Basmati rice along with ¼ cup of melted butter. Cook on low heat for 15 minutes, allowing it to steam for 5 minutes.
7.Serve the khoresht with the steamed Basmati rice.
