Ingredients

1 lb boneless lamb , cubed
1 lb eggplant , sliced
2 tablespoons salt
1 onion , diced
2 tablespoons olive oil
2 tablespoons tomato paste
1 can diced tomatoes
water
salt and pepper
1/2 teaspoon cinnamon
1 teaspoon turmeric
1/4 teaspoon nutmeg
2 garlic cloves , minced
2 tablespoons finely chopped of fresh mint
steamed brown basmati rice
Khoresh Bademjan is a classic Persian dish that has been enjoyed for generations. It is typically served with steamed basmati rice and is often a staple at family gatherings and celebrations. Instructions

1.Salt the eggplant and let it sit for 15-20 minutes to draw out excess water. Rinse and pat dry.
2.Heat the olive oil in a Dutch oven over medium heat. Brown the lamb cubes and remove from the pot.
3.In the same pot, sauté the diced onion until soft. Add minced garlic, tomato paste, cinnamon, turmeric, and nutmeg. Sauté for another minute.
4.Add the diced tomatoes and lamb cubes back into the pot. Add enough water to cover the ingredients. Bring to a boil, then reduce heat and let simmer for 45 minutes to an hour.
5.Add the sliced eggplant and continue to simmer for another 20-30 minutes until the eggplant is soft and fully cooked.
6.Garnish with fresh mint and serve hot with steamed brown basmati rice.
