1 kg chicken or 1 kg mutton , cut into small pieces
1 cup ghee
1/3 cup barley
1/4 cup yellow split peas ( chana dal )
1/4 cup split red lentils ( masoor dal )
1/4 cup yellow split lentils ( tuvar dal )
1/4 cup split mung dal
1 cup bulgur ( broken wheat )
12 -15 cups water
12 red chilies
1/2 teaspoon turmeric
12 garlic cloves
1 inch ginger
1 teaspoon salt
1 teaspoon garam masala
fried slices onion

Instructions

1.In a large pot, heat ghee over medium-high heat.

4.Add water, red chilies, turmeric, garlic, ginger, and salt; stir well.
5.Reduce heat to low and cover the pot.
6.Cook for 1-2 hours, stirring occasionally, until the meat is tender and the grains are cooked.
7.Remove from heat and stir in garam masala.
8.Serve hot, garnished with fried onion slices and a squeeze of lime juice.
