Ingredients

5 1/2 cups whole milk
1 3/4 cups half-and-half
2/3 cup basmati rice
1/2 teaspoon ghee , melted
1 handful golden raisin , soaked in water
3 -4 indian bay leaves
1 cup sugar
3/4 cup jaggery
Khejur Gur Er Paayesh, also known as Nolen Gur Er Payesh, is a traditional Bengali dessert made with rice, milk, and jaggery. Instructions

1.Rinse the basmati rice several times until the water becomes clear. Drain the excess water and set the rice aside.
2.In a large heavy-bottomed pot, add the milk, half-and-half, bay leaves, and soaked raisins. Bring it to a boil over medium heat, stirring occasionally to prevent scorching.
3.Then, reduce the heat to low and add the rice, stirring it continuously so that the rice doesn’t stick.
4.Let the rice cook on low heat for about 30-40 minutes or until it becomes tender.
5.Now, add the sugar and jaggery, stirring it constantly until the sugar dissolves completely.
6.Simmer it for a few more minutes until the mixture thickens to a pudding-like consistency.
7.Lastly, drizzle the melted ghee on top and stir it gently. Remove the bay leaves and serve the Khejur Gur Er Paayesh (Rice Pudding) hot or chilled.
