Ingredients

1 quart whole milk
1/2 cup uncooked white rice
1/4 cup sugar
1/4 teaspoon cardamom
raisins or almonds
Kheer is a traditional Indian rice pudding, famous among Asian and Middle Eastern cultures, often served at festivals or weddings. Instructions

1.Rinse rice and soak for 20 minutes. In a large saucepan, bring milk to a boil on medium heat.
2.Drain rice and add to boiling milk, stirring frequently. Reduce heat to low and simmer for 40-45 minutes, stirring occasionally to avoid sticking. The rice should be cooked completely and the kheer should be thicker now.
3.Add sugar and cardamom and mix well. Keep on stir for few minutes until the sugar dissolves.
4.Garnish with raisins or almonds. Serve hot or chilled.
