Ingredients

1/4 cup oil
1 teaspoon jeera powder
1/8 teaspoon hing ( asafoetida )
1 cup white Urad Dal ( soaked in water and ground in the mixer/blender )
2 teaspoons salt
1 teaspoon red chili powder
2 teaspoons saunf , powdered
1 teaspoon garam masala
2 teaspoons coriander powder
3/4 teaspoon amchur powder ( mango powder )
2 cups all-purpose flour
2 teaspoons salt
1/4 teaspoon baking powder
1/2 cup ghee
water , to , knead

Instructions

1.Heat oil in a pan and add in jeera powder and hing. Stir for a few seconds.
2.Add the soaked and ground urad dal and saute for 10-15 minutes until the mixture turns golden brown.
3.Add salt, red chili powder, saunf powder, garam masala, coriander powder, and amchur powder. Mix well and cook for another 5 minutes.
4.Remove from heat and let the filling cool down.
5.In a mixing bowl, add all-purpose flour, salt, and baking powder. Mix well.
6.Add ghee and mix until the mixture resembles bread crumbs.
7.Slowly add water and knead the dough. Cover it and let it rest for 15 minutes.
8.Divide the dough into small balls and flatten each ball with your fingers.
9.Place a spoonful of the urad dal filling in the center of the flattened ball and close the edges to form a ball.
10.Flatten the ball slightly and deep fry in hot oil until golden brown on both sides.
11.Drain on a paper towel and serve hot with mint chutney or tamarind chutney.
