Ingredients

1 rack lamb ( should be single with 8 ribs )
2 tablespoons ground cumin
2 tablespoons ground coriander
2 tablespoons curry powder
1 tablespoon turmeric powder
2 garlic cloves , minced
2 tablespoons grapeseed oil
salt , to taste
2 tablespoons vegetable oil
1 can yellow curry paste
0.5 can red curry paste
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon curry powder
1/2 tablespoon turmeric powder
fish sauce , to taste
white sugar , to taste
3 cans coconut milk
1 package wonton , strips
1 cup pickled mustard greens , diced
1 red onion , diced
1 lime zest
1 cup cilantro leaf
1 tablespoon red chili oil
Khao Soi is a traditional Northern Thai dish that originated with the Burmese-Mong people. The curry is known for its rich flavor and aromatic spices and is often served with egg noodles or rice. The dish usually contains meat, either beef, chicken, or lamb, and is cooked in a creamy coconut milk and curry broth. Khao Soi is a hearty and satisfying meal that is perfect for chilly nights or lazy weekends. Instructions

1.Preheat the oven to 350°F.
2.Mix together the ground cumin, ground coriander, curry powder, turmeric powder, minced garlic and grapeseed oil until well combined.
3.Rub the mixture all over the lamb rack and sprinkle with salt.
4.Heat the vegetable oil in a large pot over medium heat and add the yellow curry paste and red curry paste.
5.Add in the ground cumin, ground coriander, curry powder, and turmeric powder and stir until fragrant.
6.Add the lamb to the pot and cook until browned on all sides.
7.Pour in the coconut milk and bring to a boil.
8.Reduce the heat to low and simmer for 2-2.5 hours until the lamb is tender.
9.Add fish sauce and white sugar to taste.
10.While the curry is cooking, fry the wonton strips until golden brown and set aside.
11.Serve the lamb curry in bowls topped with the pickled mustard greens, diced red onion, lime zest cilantro, and chili oil. Add fried wonton strips on top and enjoy!
