Instructions

1.In a large skillet, heat canola oil over medium heat.
2.Add onions and 1/4 teaspoon salt, cooking until onions are translucent.
3.Stir in garlic and ginger until fragrant.
4.Add beets, remaining salt, and water.
5.Cover and cook on medium heat for 15 minutes until beets are tender.
6.Add potatoes and enough water to cover the vegetables. Cover and cook until potatoes are tender.
7.Serve hot.
