Ingredients

1 quart milk
1 tablespoon ground almonds
1 teaspoon ground cardamom
100 g sugar
3 -5 saffron strands
5 -6 drops kewra essence
25 g lightly crushed pistachio nuts

Instructions

1.Pour the milk into a large pan and bring to boil, then simmer on low heat for 60-90 minutes stirring frequently until the milk thickens and reduces in volume to around 1-1.5 cups.
2.Add the ground almonds, cardamom, and sugar to the pan and stir together.
3.Crush the saffron strands and add them to the pan, along with the kewra essence and crushed pistachio nuts, stirring gently until combined.
4.Pour the mixture into a container and chill in the freezer for at least 6 hours, ideally overnight.
5.Serve chilled, garnished with extra crushed pistachios if desired.
