Ingredients

2 lbs beef ( Use Whole cuts like roast , Flank or Round steak )
1 lb pork ( Use Whole cuts like roast , chops or rib meat )
2 medium onions , finely chopped
1 green bell pepper , finely chopped
1 yellow bell pepper , finely chopped
1 red bell pepper , finely chopped
6 crushed garlic cloves
1 celery rib , finely chopped
6 medium tomatoes , finely chopped
2 cans diced tomatoes with juice
2 cans tomato sauce
2 cups beef broth or 2 cups beef consomme
2 tablespoons hot sauce ( Like Tabasco or Durkee Redhot )
1 tablespoon ground cumin
3 tablespoons coarse salt
5 tablespoons chili powder ( Generic )
1 teaspoon arbol chili powder , I use Paul Prudhommes
1 teaspoon dried chipotle powder , I use Paul Prudhommes
1 teaspoon black pepper
3 tablespoons brown sugar
1 can lager beer , No Light beer , No Dark Beer
1 tablespoon Worcestershire sauce
Kev's chili is a hearty and spicy recipe that's perfect for a cozy night in. The combination of beef and pork gives the chili a rich, meaty flavor, while the bell peppers, onions, and tomatoes add a burst of freshness. Instructions

1.Begin by chopping all your vegetables finely.
2.Heat a large Dutch oven or pot over medium-high heat and add the beef and pork. Cook until browned on all sides.
3.Remove the meat from the pan and set aside.
4.Add the onions, celery, and bell peppers to the same pot and cook until lightly softened, then add in the garlic and cook for another minute.
5.Add back in the meat, along with the diced tomatoes, tomato sauce, beef broth, hot sauce, cumin, salt, chili powder, arbol chili powder, chipotle powder, black pepper, brown sugar, lager beer, and Worcestershire sauce.
6.Bring to a simmer, reduce heat to low, cover, and let the chili cook for at least 2 hours, stirring occasionally.
7.Serve hot, garnished with cheese, sour cream, and chopped cilantro.
