Ingredients

1 cup Guinness stout ( or other stout )
1 cup unsalted butter
3/4 cup unsweetened dutch cocoa ( apparently this is pretty important because it is acid neutral )
2 1/4 cups flour
2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 large eggs
2/3 cup sour cream
icing , of your choice

Instructions

1.Preheat your oven to 170C / 340F, and prepare a 9-inch cake pan by greasing it and lining the bottom with parchment paper.
2.In a medium-sized saucepan, pour in the Guinness beer and add the unsalted butter. Heat on low until the butter has melted, then whisk in the cocoa powder until smooth. Set aside to cool.
3.In a mixing bowl, whisk together the flour, sugar, baking soda, and salt. Create a well in the middle.
4.Crack two eggs into the well and whisk briefly. Pour in the cooled Guinness and cocoa mixture and continue to mix with a whisk or wooden spoon until smooth.
5.Pour in the sour cream and stir until combined - the mixture should be thick and homogeneous.
6.Pour the cake batter into the prepared pan and bake in the preheated oven for approximately 50-60 minutes or until a toothpick comes out with a few moist crumbs.
7.Cool the cake in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack. Serve with your favorite icing.
