Instructions

1.Preheat the oven to 425°F/218°C. Line a baking sheet with parchment paper.

3.Spread the diced pumpkin out on the lined baking sheet. Pour the curry mixture over the pumpkin and toss to coat.

5.While the pumpkin is cooking, grill the chicken breasts. Once cooked, slice the chicken into strips.
6.To assemble the salad, arrange 2 cups of arugula on a plate. Top with the curried pumpkin and chicken strips. Sprinkle with minced cilantro.
