Ingredients

2 1/4 teaspoons active dry yeast
1/4 cup warm water
2 cups warm water
1 teaspoon sugar
4 cups all-purpose flour
1/3 cup cornmeal
1 tablespoon cornmeal , for dusting
2 teaspoons salt
2 tablespoons unsalted butter , melted
2 teaspoons sesame seeds

Instructions

1.In a small bowl, dissolve yeast in 1/4 cup warm water with 1 tsp. sugar. Let stand until foamy, about 10 minutes.
2.In a large mixing bowl, combine the flour, cornmeal, salt, and sesame seeds. Add the melted butter, yeast mixture and 2 cups warm water. Mix well until the dough is smooth and not too sticky. If the dough is too dry, add a little warm water. If it is too wet, add some flour.
3.Knead the dough for about 10 minutes on a floured surface until it is smooth and elastic.
4.Place the dough in a greased bowl and cover with a towel. Let it rest in a warm place for about 1 hour until it doubles in size.
5.Preheat the oven to 450 F. Sprinkle some cornmeal on a baking sheet. Place the dough on the baking sheet and flatten it into a circular shape about 1 inch thick. Sprinkle sesame seeds on top if desired.
6.Bake the bread for 20-25 minutes or until golden brown. Cool on a wire rack before serving.
