2 eggs , beaten
60 ml hot water
1 tablespoon walnuts , chopped
1 lemon , juice and zest of
3/4 cup water
3/4 cup sugar
1 1/2 tablespoons custard powder
1 can fruit , drained keep syrup aside
1 1/2 - 2 tablespoons custard powder

Instructions

1.Preheat oven to 180C.
2.Cream butter and sugar together in a large bowl until pale and fluffy.
3.Add eggs and beat until just combined.
4.Sift flour and salt over the mixture and stir gently to combine.
5.Add hot water, lemon juice and zest, and walnuts. Mix well.
6.Transfer the batter into a greased cake tin.
7.Bake in the preheated oven for 25-30 minutes until golden brown and cooked through.
8.Allow cake to cool in the tin.
9.In a saucepan, combine sugar, custard powder, and water. Heat mixture over medium-high heat and allow it to thicken.
10.Add the drained fruit and syrup to the saucepan and cook until syrup is thickened. Stir in custard powder and cook for another minute.
11.Serve the tea cake with the fruit custard.
