1 can kidney beans ( with liquid )
1 large onion , chopped fine
1 large green pepper , chopped fine
2 garlic cloves , minced
1 tablespoon chili powder
1 teaspoon cumin
1 can crushed tomatoes
cheddar cheese
8 large tortillas

Instructions

1.In a large saucepan, heat two tablespoons of oil over medium heat.
2.Add the onions, green pepper, and garlic to the pan. Cook until the onions have softened, stirring occasionally.
3.Add in the chili powder, cumin, black beans, kidney beans, and crushed tomatoes with their liquid. Stir to combine all the ingredients.
4.Reduce heat to low, cover and simmer for thirty minutes, stirring occasionally.
5.Preheat the oven to 350°F (175°C).
6.Take the tortillas and divide the mixture evenly among them.
7.Sprinkle some cheddar cheese on top of the mixture of each tortilla, then roll them up tightly and place them seam side down into an oven-safe dish.
8.Cover and bake for approximately 25 minutes or until the cheese is melted.
9.Serve hot.
