Instructions

1.Preheat oven to 375°F (190°C).

4.In a small bowl, whisk 4 egg yolks. Add a small amount of the grits mixture to the yolks while whisking, then add the remaining grits mixture slowly while whisking constantly.
5.In a large bowl, beat 4 egg whites until stiff peaks form. Gently fold in the grits mixture until well combined. Add 1 cup of grated sharp cheddar cheese. Mix until cheese is evenly distributed.
6.Pour mixture into a greased 2-quart soufflé dish. Bake until puffed, golden, and firm to the touch, about 35-40 minutes. Serve immediately.
