Kentucky Banana Pudding is a popular dessert in the Southern region of the United States. It is often served at family gatherings, church potlucks, and picnics. The pudding is made with a combination of milk, sugar, and cornstarch, which creates a custard-like texture that is layered with vanilla wafers and ripe bananas. Some variations of this recipe call for whipped cream, condensed milk, or meringue on top. The origins of this dessert are not clear, but it is believed to have been invented by Southern cooks in the 19th century as a way to use up leftover ingredients.

Instructions

.In a 2 quart saucepan, mix the sugar and cornstarch together. Add in the beaten egg, evaporated milk, and milk, then whisk until all ingredients are combined.
.Turn on medium heat and continue whisking the pudding ingredients for about 10 minutes or until the mixture thickens and comes to a boil.
.Remove from heat once it reaches the desired consistency, then stir in the vanilla extract. Let the pudding cool down.
.In a 9 x 13 inch dish, arrange a layer of vanilla wafers on the bottom, then place a layer of sliced bananas on top of the wafers.
.Pour half of the cooled pudding over the wafers and bananas, making sure to spread it evenly.
.Repeat step 4 and 5 to create a second layer of wafers, bananas, and pudding.
.Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight.
.To serve, take the pudding out of the fridge and remove the plastic wrap. Crush some vanilla wafers and sprinkle them on top for added crunch and flavor.
