6 roma tomatoes
2 cucumbers
2 green bell peppers
1/4 cup garlic , whole
1 cup water
1/2 cup sherry wine vinegar
2 jalapenos
1 head cilantro
1 baguette
1/2 cup smoked paprika
1/4 cup cayenne pepper
salt , to taste

Instructions

1.Cut the roma tomatoes, cucumbers, and bell peppers into large chunks and set them aside.
2.In a large pot, heat the oil over medium-high heat.
3.Add the garlic, jalapenos, smoked paprika, cayenne pepper, and a pinch of salt.
4.Cook for 2-3 minutes, stirring occasionally, until the garlic is slightly browned.
5.Add the chunks of tomato, cucumber, and bell pepper to the pot and continue to cook for another 5 minutes.
6.Add the water, sherry wine vinegar, and cilantro to the pot.
7.Stir to combine and bring the mixture to a boil.
8.Once boiling, reduce the heat to low, cover the pot and simmer for 30-40 minutes.
9.Allow the soup to cool slightly and then transfer it to a blender (or use an immersion blender) to blend the mixture until smooth.
10.Once blended, taste the soup and adjust the seasoning with salt and pepper as desired.
11.Chill the gazpacho in the refrigerator for at least 2 hours.
12.To serve, toast the baguette and cut it into small cubes. Serve the chilled gazpacho with the bread cubes as a garnish and enjoy!
