100 g lychees in heavy syrup
15 g gingerroot , peeled and grated
150 ml water
mint leaf , for garnish

Instructions

1.Drain the lychees and reserve the syrup.
2.In a blender, puree the lychees and ginger until smooth.
3.Add the reserved syrup and water to the blender and pulse until well combined.
4.Pour the mixture into a shallow dish and freeze for at least 4 hours, stirring occasionally with a fork to break up any ice crystals.
5.When the mixture is frozen, scrape it with a fork to create a fluffy ice texture.
6.Serve the Kem Trai Vai Voi Gung in bowls, garnished with mint leaves and whole lychees if desired.
