1 pound lean ground turkey
2 large carrots , grated
2 tablespoons dried minced onion
1 diced fresh jalapeno pepper , or to taste
1 package taco seasoning mix
1/2 teaspoon kosher salt
1/4 cup water
1 cup plain Greek yogurt
1 can condensed cream of chicken soup
2 cups shredded queso quesadilla ( Mexican melting cheese )
7 flour tortillas
1/2 can red enchilada sauce
Kelly's Enchiladas are a flavorful and healthy take on classic enchiladas. The ground turkey paired with the creamy Greek yogurt makes this recipe a delicious and high protein meal that can be enjoyed any night of the week. Instructions

1.Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2.Cook and stir ground turkey, grated carrots, and dried minced onion in a large skillet over medium-high heat until turkey is browned and carrots are tender, about 10 minutes.
3.Add diced jalapeno pepper, taco seasoning mix, kosher salt, and water to the skillet; stir well. Reduce heat to medium and simmer for 10 minutes.
4.In a medium bowl, mix together Greek yogurt and cream of chicken soup.
5.Spread 1/2 can of enchilada sauce evenly in prepared baking dish.
6.Spread about 1/4 cup cream of chicken mixture down the center of each tortilla; top with about 1/3 cup turkey mixture and 1/4 cup shredded cheese.
7.Roll tortillas around the filling and place seam-side down in the baking dish. Repeat with remaining tortillas.
8.Pour remaining 1/2 can of enchilada sauce over tortillas; spread evenly. Spread remaining cream of chicken mixture over enchilada sauce.
9.Sprinkle remaining shredded cheese over the top of enchiladas.
10.Cover with aluminum foil.
11.Bake in preheated oven for 20 minutes. Remove foil and continue baking until cheese is melted and bubbly, about 10 minutes more.
