2/3 cup sugar | |
1/2 cup plain low-fat yogurt | |
4 tablespoons mild olive oil | |
2 cups plain flour | |
1/3 teaspoon baking soda | |
3/4 cup currants | |
1 teaspoon vanilla extract |
1. | Preheat the oven to 350°F/180°C. |
2. | Grease and flour a 9x5 inch loaf pan. |
3. | In a large bowl, beat eggs and sugar together until thick and pale. |
4. | Add yogurt and oil, mix well. |
5. | In a separate bowl, combine flour and baking soda. |
6. | Add the dry ingredients to the wet mixture and beat until just combined. |
7. | Fold in currants and vanilla extract. |
8. | Pour the batter into the loaf pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean. |
9. | Cool for 10 minutes before removing from pan and slicing. |
