2 sprigs fresh coriander , finely chopped
2 sprigs flat leaf parsley , finely chopped
2 tablespoons olive oil

Instructions

1.In a bowl, mix ground lamb or beef, grated onion, salt, pepper, sweet Hungarian paprika, fresh coriander, and flat leaf parsley to form small meatballs.
2.In a large skillet, heat olive oil over medium heat and cook the meatballs until browned on all sides. Remove from pan and set aside.
3.In the same skillet, sauté grated onion, salt, sweet Hungarian paprika, ground ginger, turmeric, and cayenne pepper for 2-3 minutes or until fragrant.
4.Add tomato paste and cook for another 1-2 minutes. Pour in lamb or beef stock, add squash or potatoes, and bring to a boil.
5.Return meatballs to the pan, then reduce heat to low and simmer for 30-40 minutes or until the sauce thickens and the meatballs are cooked through.
6.Add peas and beaten eggs into the pan, stirring gently until the eggs set on top of the sauce. Serve hot with crusty bread or as desired.
